Meet the Startup: Gimme Sabor
Gimme Sabor (Guimarana Dream Food S.L.) is a Spanish foodtech company founded in Murcia—one of Europe’s key regions for spices and seasoning exports—building the next generation of inclusive, clean-label flavor solutions for the global food industry. They combine proprietary flavor reverse-engineering methods with culinary expertise to recreate the taste and aroma of animal-based foods (meat, seafood, dairy) using only plant-based ingredients. Their formulations are designed to be allergen-free, additive-free, and MSG-free, while delivering deep, premium umami and high consumer acceptance.
Their technology starts by identifying the key volatile organic compounds (VOCs) and sensory drivers that define a target flavor (e.g., tuna, salmon, pork, cheese). They then reconstruct those profiles by extracting and recombining equivalent compounds from plant sources, supported by their proprietary database of 20,000+ plant-based references. Because food is more than chemistry, their chef-led development approach adapts each flavor to local palates and ingredients—ensuring cultural relevance and stronger market fit. This “science + culinary” model is a core differentiator versus companies focused only on texture or generic plant-based positioning.
They have developed 40+ flavors across savory and sweet profiles and use them in two ways: (1) as high-performance ingredients (broths, seasonings, flavor systems) for manufacturers and foodservice, and (2) as finished or co-developed products such as their shelf-stable plant-based tuna and a portfolio of ready-to-use sauces. Their solutions enable food companies to build products that are accessible to a wider consumer base regardless of dietary, health, or religious restrictions, and can be adapted to requirements such as halal or kosher. In addition, their shelf-stable and concentrated formats help reduce cold-chain dependence and food waste across the value chain.
Commercially, Gimme Sabor has validated demand through international growth, with sales across five European countries and active operations in South Korea (including a local subsidiary). They are now focused on Japan as a strategic market and innovation partner—particularly because Japanese companies value clean-label quality, authentic umami, and scalable product excellence for both domestic and export markets.
Through Next Kitchen, they aim to accelerate business matching in Japan, co-develop localized formulations with Japanese partners, and establish Kobe as a natural base for our long-term presence in the country.
